Sugar Free Lemon Strawberry Italian Soda with Stevia Sweet Juice Concentrate

Are you one that doesn't like the taste of Stevia?  Try this before you write it off -- Stevia Sweet Juice Concentrate (SJC).

Never heard of Stevia Sweet Juice Concentrate?

I hadn’t either but I saw a blog post about it on The New Lighter Life Blog (NLL).  It’s basically a simple syrup that has “fermented” and the bitterness is gone. It's so easy to make and have on hand.

Are you ready for it?  Are you sure?  Ok here is what you need . . .


Stevia SJC (Sweet Juice Concentrate)

Ingredients:
2 cups filtered water
1/2 Tbsp Pure Stevia Extract

Instructions:
Pour pure stevia extract into a pint jar (I used a mason jar which holds the perfect amount of liquid), add water to jar and mix.  Let the jar sit uncovered for 48 hours on your countertop.  After 48 hours, cover jar with lid. This can be stored in your refrigerator or you can leave it on your counter up to a week, depending on how fast you use it.  Note from NLL blog:  I’ve had mine sit out for a week with no ill effects.

The amount of SJC you need depends really on your preference.  Start with little and work up.  You can always add more.  Stevia is sweet and SJC can be overwhelming.

Note from the NLL blog:  Also, I was completely out of SJC and about 36 hours into the fermentation of a new jar.  I tried my batch at that point and it just didn’t taste right.  I don’t understand the need for 48 hours but can attest to the necessity of the fermentation time.

Initially it is a little cloudy but it ends up being completely clear by the time your Stevia SJC is ready to use.

That's it!  I've used Stevia for a few years and it's been fine for me but I wanted to try this for some other applications that I think it would work like the SUGAR FREE LEMON STRAWBERRY ITALIAN SODA that I've been anxious to try after seeing Chef Todd make the Lemon Peach Italian Soda in the Thrive it Up Cooking Show. I made up some Stevia SJC and it worked wonderfully in my Sugar Free Version!  I also used Strawberries instead of Peaches - I think any of the Thrive FD Fruits would work great.


FD - Freeze Dried
Thrive product numbers are for Pantry size cans

Ingredients:
2 cups Thrive FD Strawberries (#22344)
1 1/2 t. Thrive Classic Lemonade Powder (#22899)
2 cups Stevia Sweet Juice Concentrate**
1 t. vanilla extract
Ice
Soda Water
Whipping Cream

Instructions:
To make the concentrate, add strawberries to blender or food processor and puree into powder. Add 2 cups Stevia SJC, vanilla, and mix well.  Add water to make 3 cups.  Makes about 3 cups concentrate.


For each soda, add ¼ cup of the syrup with ½ cup ice, ½ cup soda water, and 1 tbsp. cream to a glass. Stir well to incorporate.

Feel the Burn Thrive Lemonade

I've started a journey to get healthier and lose weight.  I've dieted for years and no longer want to play that game.  Since I've been using THRIVE products for over a year, I've already started incorporating more nutritious ingredients into my cooking.  Recently, I stumbled onto a healthy eating plan that feels right for me - Trim Healthy Mama (THM).   I bought the book and discovered it will be easy to incorporate a lot of my nutritious, time saving THRIVE products in this new eating plan - Yeah new recipes to Thrivealize!

I started playing around with it 2 weeks ago. The first recipe I Thrivealized was the THM recipe for "Good Girl Moonshine"





I created my own version using THRIVE Lemonade. THRIVE Lemonade is unsweetened so it is a perfect addition to this for a great summer flavor! Another way to use this great product!

I loved the taste and have been drinking 1-2 quarts a day.  I lost 5.5 pounds that 1st week.

Then I went to the beach for a week for a family reunion.  We took turns cooking for our group of 35 so I couldn't totally control the food,  but I did watch and I drank my "FEEL THE BURN" LEMONADE daily.  Here's some of us on the beach (I'm the head showing between my niece & nephew on the right).

I actually did good and didn't gain anything back at the beach - I maintained the 5.5 pounds I had lost!

So here's my new BEFORE picture when I was flying a kite on Jockey's Ridge on the Outer Banks in North Carolina. You can follow my blog for the recipes I create and the weight I lose as I THRIVEALIZE myself to a new healthy weight and lifestyle!

The THM Plan organizes your meals around the 2 types of fuel your body burns -- Fat & Carbs.  Protein is the one constant in every meal. I'm trying to provide my body with either Fat OR Carbs for fuel - not both in one meal.   So . . . Low Carb meals/snacks are Satisfying or "S"meals/snacks, and Good Carb meals/snacks are Energizing or "E" meals/snacks.  It's important that you provide both types of meals/snacks so your metabolism doesn't get lazy processing just one type of fuel.  I love it because there is no right or wrong way to arrange your "S" or "E" meals/snacks.  The only rule about switching between one or the other is to give you body 3 hours in between to totally process the previous fuel source before you introduce the other one.

I will also be THRIVEALIZING some Thrive recipes to make them more in line with either an "S" or an "E" meal/snack.

1 Quart Glass Jar filled with Ice

Ingredients:

1 Tablespoon THRIVE Lemonade Powder (SEASONAL so stock up now!)
2-4 Tablespoons Raw Unfiltered Organice Apple Cider Vinegar (I use Braggs)
1 teaspoon Ginger Powder
1 teaspoon Stevia Blend or 2-4 "doonks" (tiny spoon in) Pure Stevia Powder
1/8 - 1/4 teaspoon Cayenne Pepper, ground (optional)

Directions:
Add ingredients to the quart jar of ice.  Fill with water and stir or put lid on and shake.  That's it! Now take a sip and you can "FEEL THE BURN" in your throat from the ginger and cayenne as you drink it!

Strawberry Lemonade Bars

FD – Freeze Dried
Product Numbers after items are for Pantry Cans

Ingredients:

Crust:
1/4 cup Thrive White Sugar (#22671)
1/2 cup butter, room temperature
1 1/2 cups Thrive White Flour (#22116)
1/4 teaspoon Thrive Salt (#22668)

Filling:
1 cup water
1 1/2 Tablespoons Thrive Classic Lemonade (#22899)****
1 cup Thrive FD Strawberry Slices (#22344), rehydrated and pureed
1 1/4 cups Thrive White Sugar (#22671)
5 Tablespoons Thrive Whole Egg Powder (#22570), reconstituted
1/4 cup Thrive White Flour (#22116)
1/2 teaspoon Thrive Baking Powder (#22660)
1/4 teaspoon Thrive Salt (22668)

Directions:

Preheat oven to 350 degrees and lightly grease a 9 x 13 baking pan.

Begin by making the crust.  In a large bowl, cream together sugar and butter, until smooth and fluffy. On a low speed, gradually beat in flour and salt until mixture is crumbly. Dump into a prepared pan and press into an even layer. Bake for about 17 minutes, until set at the edges.



While the crust bakes, prepare the filling.  In the bowl of a food processor or blender, combine water, Thrive classic lemonade, strawberry puree, sugar and eggs and process until smooth. Add in flour, baking powder and salt, and then pulse until smooth.



Gently pour the filling over the hot baked crust. Return pan to oven and bake for 23-26 minutes, until the filling is set (There will be a light colored “crust” on top from the sugar in the custard – that's ok).




Cool and sprinkle the bars with some Thrive Powdered Sugar (#22672), if desired.  Cool completely before slicing and use a damp knife to ensure clean slices.  Store bars in the refrigerator, especially on a hot day -- if they last that long!

Makes 24 bars.

Original Recipe -- Strawberry Lemonade Bars
